How food affects our body and mind has become a major interest of mine since moving to America in 2021. There's no shortage of info about plant based diets and after learning more about all the potential benefits, I decided to give it a try. My typically picky eating daughter and husband were surprisingly receptive with the one caveat that we had to build in a cheat day every Saturday. Seemed reasonable. It didn't take long to understand why plant based diets are such a big deal. 

 

In a few short weeks I've: 

 

  • lost weight

  • have noticeably better skin and hair

  • felt less bloated 

  • saved money

  • discovered the flavors that vegetables can offer

  • reduced my carbon footprint

 

What better reasons to continue to explore a plant based diet than feeling healthier, saving money and having a more sustainable lifestyle!  These incredible benefits have inspired me to write, photograph and style my own plant based cookbook. I hope you enjoy the journey as much as I have!
